Looks like heâs using the two antennae of the Etherwave theremin independently to feed two control voltages to an analogue synth. I donât recognise the other kit.
Edit: this video seems to show much the same kit, and the large keyboard is indeed a Nord. He also has some Moog box with knobs.

Yes, the Joué MIDI controller is also French and some of his titles are perhaps more obviously French to a non-francophone reader.
