They will but they will give you maximum attack and release times only half what 1M would.
Unless you change the capacitance — you could use a 2.2 µF cap, or two 1 µF in parallel, and that would bring the time constant back up again. (You’d probably have trouble finding a non electrolytic 2.2 µF. Of course nonpolarized electrolytic is okay.)
